If I'm am looking to increase acceleration, would I go up or down on my roller weights?

It depends if your RPM is currently too high or too low.
Heavier weights will reduce RPM. Lighter weights will increase RPM.
It is often said that lighter weights will increase acceleration and heavier weights will increase speed. There is some truth to this, but there's more of a tuning process to it than that. Very heavy rollers will make the engine bog or struggle to rev and operate poorly and at low speed. Very light rollers can make the engine over rev and accelerate slowly and to a low speed.
Ideally you want to select the weights that allow your engine to operate nearest it's peak output as much as possible for best performance. Somewhere between peak torque and peak horsepower.
