Hey. I need some help. Could a leak in my inlet manifold cause my pulse scout 49 to really struggle on hills and flat ground? Its a 2014 bike with 2000 miles on. It was just yesterday i noticed my inlet mani was cracked and leaking. Also i dont think my carb is set up properly. Should i buy a new carb? Any other helpful tips would great

The short answer is yes. Fix the leak and then reevaluate the carb setup.

Im not really to good with carbs. Should i take the fuel/air mixture screw all the way in and work my way out from there?

Im also looking to change my rollers. I think standard rollers are 7g would i suffer top speed from 5g rollers?

It depends how far it's off now. Sometimes you gain speed with lighter rollers. You only loose speed once they get light enough that you are over the powerband and/or they are light enough that they can't fight the contra spring to push the variator closed.
Consider sliders if you have to buy weights. They don't wear like rollers and sometimes improve performance slightly vs rollers. You may have to go a little heavier with the sliders compared to rollers, so if you want 5g rollers, maybe try 6g sliders. Another option would be to get 5g sliders, then stuff them with aluminum foil if they need to be heavier. You need to keep them equal in weight though, so a small scale comes in handy. You could just cut equal sized pieces of foil to keep them even, but you don't know what they weigh for future reference that way.

Going back onto my origianal post. Ive changed my inlet manifold and changed the carb back to default bike now stays started and not cutting out. But now my bike wont go above 10 and doesnt rev very high. Any ideas guys?

Sounds like a main jet size issue at this point. Might not be getting enough gas to the engine. Or too much. Tune it proper to find out.
