Sit rep: I have a 2015 zuma 50f 4t and I decided to do some upgrades in the last few months. So I have added:
Polini 70cc bbk Athena performance variator Heavy contra spring Malossi final drive Two brothers exhaust
The bbk was the most recent addition and I noticed that the temperature warning light comes on after about 5-10 minutes of riding and goes off when I shut the engine off for 2-3 minutes but comes back on after I ride a few minutes. I checked the radiator fluid and burped it to made sure the bubbles were out (I think successfully) but I am still at a loss as to what my problem could be.
I grew up working on tractors and dirt bikes but I cannot seem to crack this problem. Any help would be appreciated!!
***UPDATE***
I decided to change all of my fluids and check bother my the exhaust and mistake gaskets but to know avail. I finally broke down and ordered an EJK because my 4T is also fuel injected and it appears the problem is due to runnnng very lean. Thought? Opinions?

Could the wire have gotten bent enough to cause any problems? I bent a sensor wire on mine and was getting all sorts of weird readings. As soon as I swapped it for a new one that, luckily I already had, it worked fine.

what main jet are you running? a too lean mixture can result in a hot running engine and i guess 70cc just does run hotter than stock 50cc so maybe the threshold is a bit low so i guess installing a temp gauge wouldn't be a bad idea if you are really worried about it

The sensor should be in fine shape, it hasn't ever been removed but I can check the wire situation.
The engine is fuel injected
I guess my main question is whether or not it is a false reading because it is a bigger piston and the sensor's threshold is too low or if it really running too hot.

I guess my main question is whether or not it is a false reading because it is a bigger piston and the sensor's threshold is too low or if it really running too hot. Where is the temp sensor located? I was assuming that it's in the head like a lot of the 2 stroke motors. You have fuel injection on that scoot, so there is no main jet. You can get bigger injectors, but if Polini thought one was necessary then I'm sure they would have included one in the kit.

The sensor is right next to the spark plug (part 6 in diagram)

So then you swapped the sensor from the old cylinder to the new cylinder?

Since its water cooled...is the rad blocked? or waterpump impaired? Could even be a pinched hose.

The sensor stays in the block during the upgrade so I wouldn't have been damaged. Can you buy aftermarket coolant sensors? Do people upgrade that? I appreciate the input, everyone!

Does it have an electric water pump? Maybe you blew a fuse?

It has a water pump but it's not electric.
My best guess is that the increased bore and new exhaust is making it run lean...

Going with a bigger bore often increases compression. That increases heat. If it flows better it will need more fuel. But if you were marginally running hot before, now that summer is here you might also be running hotter because it IS hotter outside. Your spark plug should be able to tell you if your running lean or hot. You may need to adjust fuel pressure (up) or increase injector nozzle size to compensate. I'm counting on that FI system and motor not needing complex dialing in like a high performance car would need. Hopefully just on and off. As a last resort, you "could" convert it to carburetor (boooo). lol
