I run the same cylinder. Metrakit SP3 which is an Athena Racing aka Athena Evo aka Stage 6 racing mk1. Along with a Yasuni c16 and Dellorto PHVB 20.5mm. Ran it before with a metrakit SP exhaust which is basically 3-400 rpms below the C16.
Both work in city traffic but a Yasuni R would make for a more comfortable ride, less revvy, less noise, less attention.
Intake noise is by far the worst to counter. Made a huge airbox with multiple chambers to muffle intake sound. That worked great but was super bulky.

If 55 is all you want go with the Yasuni R and swap back to the stock carb. Makes it a way more capable daily driver.

Stroking any motor you will feel the extra tarque its making, more than stright out speed, be pending on what motor and what kit you want to do, ive never stroked a 50cc once you go 70cc with good pipe and carb set up its screaming allready, but 100cc motors respond very well to stroking, so I guess its the same for 70cc but just not as much tarque incres, you need to know what your doing, or buy a stroking kit thats made for motor , then you won't have trouble with port timing, when I first stroked my first motor I ended up with 212° exuarst, lol that's 15k revs not going to happen on a air cooled motor so I took 2mm off bottom of barrel and got my 197° 135°trans cant.rember blow down, so there's more to it than just bolt a bigger crank and bbk
