What you describe is a classic symptom...slow and gradual loss of power..then shutting off and difficult to restart.. Check those first. Then tell us what ya found..

Umm I went and bought fuller gauges and set then at .003. Also when I ride for a period of time my scooter will completely jus cut off on me.

Pull off the fuel line going to the carb when it dies ansd see if anything comes out. There should be a small amount left in the tube.

Carry a spare plug with you..and the minute it cuts outs pull the plug wire and push the spare plug in it..then ground it to frame and crank the engine looking for spark. Sometimes when the pickup coil gets hot they stop working..and you get no spark. ALSO do as flqu06 mentioned above...if it is a fuel delivery issue such as a bad vacuum petcock..you may lose fuel flow and like he said some should still dribble out. You can leave the carbs fuel inlet line off then pull the vacuum line from the intake manifold..give it a few gentle sucks(vacuum line) and fuel should flow. If not the vacuum petcock is bad. If it does flow when you suck on the vacuum line..your float height may need to be adjusted. Also VERIFY your valve lash setting..it may have loosened and become too tight again. Try those..then let us know..
