A large batch of simple crockpot chicken chili. Chop up 3-4 onions, 3 jalepenos, and 6 chicken breasts (4-5lb) and put them in a crockpot. Add 5 cans of northern beans, 1 can of corn and 1 can of black beans (all drained). Add 3 packets of taco seasoning, a little black pepper and a 32oz box of chicken broth. Cook on low for 5-6 hours. You can add cream cheese (up to about 24oz) if you'd like. Add in the last 1-2 hours and put it on high and stir in. You may want to add more or different peppers or other heat if you don't want it very mild, plus it's good with more fresh vegetables. This amount feeds 3 fat adults for 3-4 nights and maybe a bowl for lunch here and there and it's inexpensive. Lighter eaters may not need to cook for a week if you don't cut it in half.

Not sure what caused me to wake up today and say "LASAGNA!" Perhaps it was the milk stout last night haha. Well, damn, if this is the world's best, then let's do it! Fresh minced onions & garlic. It's so beautiful I am still crying as I write this. Touch of sun shining through the window. It's gonna be a good day. Stay tuned?!
