This is what i eat mostly, i use big pot so it lasts for a week. Topped with avacado oil or coconut oil or canola oil makes it taste really good. I don't even put salt anymore. Normally its watery like soup, but its not a soup. When i put rice, buckwheat or quinoa or all three, it becomes more solid. Another option.Or can drain the water and drink it later, it taste like vegetable juice. Looks good. What is it, veggie chili? Your own concoction? I'd be interested to try it. Not to start a rant or anything, but when I was laid up with a busted achilles a couple years ago, I got more into health food than ever before. For as much as I like it, meat is unhealthy for a lot of reasons. The one that really turned me off is the mass-production chicken/cattle/pig farms. The corporations basically steal your license to produce if you let a camera crew inside. And even if you go free-range/organic, animals are still good at concentrating man-made pollution in their bodies - fish are a good example. Gone are the days of a clean, plentiful earth, man! Pretty depressing. As long as I don't think about it, eat what I want, and that's probably not good.

Tonight im gonna make thai green chicken curry. Lot's chili's will go in which will most certainly (literally) kick my ass the next day. Last night i put chicken cubes in wet marinade: olive oil, sweet soy sauce, extra hot sriracha sauce, pepper, ginger and paprika powder.

Looks good. What is it, veggie chili? Your own concoction? I'd be interested to try it. Its my own concoction i guess. I used to be vegetarian eating only raw-food uncooked food in the past, mostly in the form of salads, since then like 10 years have passed and i started to eat standard American diet, this is my comeback at being vegetarian, i find it easier than making salads. You can add or subtract any vegetables you want there's no hard recipe to follow, variety of different ingredients is the name of the game here. Basically i use what i can find in local supermarket vegetable aisle. Total cost for all ingredients is $20-30 in and lasts me almost whole week, i do cook meat also when i feel like it, i try to eat vegetables as 80% of my food.
Hard veggies (mostly for fiber and minerals)
- rutabaga (rarely available)
- beets (have to go 10-15 minutes before everything else cuz they take longer to cook)
- sweet potatoes
- regular potatoes
- carrots (i juice the carrots and use leftovers to cook obviously i peel them)
- turnip
- asparagus
BROWN rice, buckwheat, quinoa or any grains that will soak up excessive water got to find the perfect ratio so you don't have to add more water or you can cook them on the side and then mix together. This usually cool like 45 minutes on medium-low fire, while i cut up other veggies.soft veggies and greens - (vitamins)
i put towards the end because i don't want them to loose too much nutrients, if you do first time you might want to cook them longer to soften up. - broccoli
- cauliflower(could add rotten smell)
- white / red or yellow onion one whole head (or you can roast it and add at the end)
- green onion
- celery
- green / red pepper
- radish
- salt (if you like)
this might cause bloating and gas for some people, its also foods with most nutrients and vitamins.
add together and cook another 15-20 minutes
fresh vegetables- avocado
- cucumber
tomato
orange (fiber)
i top it up with either coconut oil (triple-filtered to remove taste), canola, avocado oil or lemon juice Body will digest this fast so you will get hungry faster then if you eat meat, however you will never get sleepy after this food because its all vegetables and makes my mind sharp and boost immune system so my skin is not dry anymore.

I agree on that meat has antibiotics and growth hormones, organic is too expensive and i don't even believe it is much better, most vegetables and fruits are genetically modified in US as well.

Thai food is great, especially fresh off the streets of Bangkok! I made Tom Yum Gai from scratch a couple weeks ago but didn't have the gumption to post the process here. Maybe next time.

Yeah the longest I ever sustained a veggie diet was one week. I always had to eat a bunch of peanuts or something afterward just to trigger the brain to say you're full, despite my gut sticking way out!

Yeah the longest I ever sustained a veggie diet was one week. I always had to eat a bunch of peanuts or something afterward just to trigger the brain to say you're full, despite my gut sticking way out! Some say its the feeling of having full stomach that we are used to, its not actual hunger.
I can go to all-you-can-eat restaurant and stuff my stomach with meat and other heavy food to the point that i feel full, then push it rough my stomach with plate of fruits and vegetables and feel hungry again, then i can go for more meat.
