A security camera or cameras would be my first thought for dealing with this. I haven't paid much attention to what's out there, but there have to be some simple solutions that don't cost very much and could be hidden. Get the fool on camera and then contact the police.
Locking gas cap is another thought.

It'll destroy your engine too but sugar comes to mind.

It's a pain in the ass for you but drain your tank and fill it with water then after the jerk steals it pull the tank and flush it with a quart of acetone,,(acetone absorbs water)

Use a oil base stain. Choose a color that's close to the fuel color.

Gasoline , with enough diesel to mask the smell. I lost track on how many diesel headgaskets/engines ive replaced at work due to gasoline..

Sugar: doesn't dissolve so has the same effect as sand. clogs the filters. +is pretty visible and will stay in the tank. on the bottom water: very effective stays under the diesel so has pretty fast effect. also kind of ruins the engine.(depends on how old it is). downside pretty visible using a clear container gasoline in diesel: well havent tried it but yeah I suppose the engine really doesn't like it so that would be a good option indeed. Bleach: Corode's everything and leaks past the piston rings and gets rid of oil so he will be kind of fked when he got some in his tank. so I guess just but enough in that you can't smell it for the rest same effect as water since bleach is still 90%water but still visible in an clear container ;P So I would mix some bleach and gasoline in the mixture. and a few drops of break fluid also wouldn't be bad

That is a good idea , or just add a bunch of cheap two stroke in your fuel ahahahah make his smoke like a train and kill plugs !

Gas. As little as .5% of gas in a diesel can cause damage. So not knowing how large of a tank he is putting it in I would guess a mix of 50% would do the job. The damage will be in the injectors and the high pressure pump as the fuel double as lubricant for those items just like oil in a 2 stroke. Adding any type of an oil to a diesel won’t really cause any issues Water is very easy to deal with in a Diesel engine simple additives deal with it as well as many vehicles have a water separating system

It'll destroy your engine too but sugar comes to mind. And the sugar makes the engine seize when it cool of after running. It would not be able to start it again.
