TLDR: I helped a co-worker pick up a motorcycle. The seller had this Vino Copy Cat in the corner of his garage. Fast forward a few weeks, he isn't doing anything with it so I scooped it up for a cool $100. I think I have all the plastics and it came with a spare Mikuni carb.
Question #1: Does anyone know of a manual choke to replace the electronic enricher for this Mikuni?

I don't know of a choke cable adapter for an OEM style carb, but the early 1st-gen Zuma had a manual choke. Maybe it'll have a carb usable for what your trying to do. The OEM choke circuit works pretty well usually. The Venice is a good bike, I had a couple. Good mix of clone parts.

I aired up the tires and rolled it out of the garage to see if the mikuni would make a difference. Same result of it just puttering for a moment then dying. It feels almost like a no gas situation but there’s fuel in the bowl and the carb is freshly cleaned. I’m going to buy a compression tester on my way home from work and will report back with the results. If it’s poor compression then I’ll sleep easier knowing that’s the root of my no-run issue.

Probably a long shot, but might be worth trying, especially if the spark plug looks wet after attempting to start... I had a really hard time starting mine the first time, even though I was getting good spark. It was suggested I put the air box on, which seemed to help the scooter fire, but it would die immediately. I figured if air flow was so sensitive to the engine, I might as well try pulling the pipe to rule it out as a restriction. The first kick start it ripped to life. I flushed the pipe with water and let it dry a day and it's been great ever since.

Took the scoot out this morning. Here is the order of operations and results. Before anything, I removed the stock exhaust and threw on a no-name expansion pipe. The stock pipe sounds like a rainstick when you shake it.
Steps: Removed fuel line going to carb. Removed vacuum line going from carb to fuel pump. I checked the pump by blowing on the vacuum line. Result: It did dump fuel out.
Check the pump off the list.
Steps: Put the fuel line on the carb and blew on the vacuum line. Unscrewed the bowl drain Result: Fuel came out.
Steps: Dribbled fuel directly down the carb. Result: Ran good but died out.
Steps: When the engine died out, I checked for spark. Result: Engine still has spark
Steps: Pulled the carb, cleaned the jets again. Result: Actually ran long enough to take for a ride! I didn't stay in WOT since I'm certain that the pipe would lean it out.
A few hours later. Last step: I put the stock pipe back on. Result: Barely sparked once.
Double test: I just swapped the expansion pipe back on. Result: Same issue. It will just sputter and die out. If I give it any throttle, it will die even sooner.
So, more air = needing more fuel which it isn't getting. hmm.
I'll check the carb again but I seriously just cleaned it. I'll also check the Intake manifold for any cracks.

I just got an air compressor and a nozzle to hit it again. The previous attempt, I was separating wire into individual strands to clean out the jets and passages. I’ve never had an issue like this. I’ll report back after the third cleaning.
