I have the opportunity to replace my stator since my current one is trashed. I'm also adding a few electrical appliances like cigarette lighters, phone charger, secret kill switch; so I imagine I'll need more power for those (eventually I want to add speakers and a payback module, so it'd be nice to be prepared for that as well.
Current stator: 4-pole on a 2009 50cc TGB Key West 2T. Not sure about phase count, but I assume the five wires attached to the stator are for ACV (3), spark and ground.
So the question is: is a stator upgrade 1) possible, and 2) the answer to my power problem?

My experience with the TGB R50X is that it wanted a specific stator and flywheel for that model year. When I had ones from different years together they didn't work. I talked to TGB USA and they said that was right that you needed them to match. That said I say go for it and be sure that you get a stator and flywheel that are matched to each other. I believe they have an 8 pole stator.

"they" being TGB?
Yeah, I'm fully willing to replace the flywheel and rectifier if needed. Would any other modifications be necessary?

Matching stator and flywheel are a must, other than that it should work fine..We had a build thread here a few years back about this, seemed only one type of stator could be found and guys were trying them with their wrong flywheel with no joy.. I think its in this one somewhere; 49ccscoot.proboards.com/thread/10231/2006-tgb-r50x-bat-outta

I’ve stumbled across that thread before. Several chapters to it.
Went for an 8-pole with matching flywheel (easy because GY6). This is a GA5, so may require a small bit of dremel-ing. Waiting on magneto to arrive. If it fits, it’ll by 1mm tops, I predict.

I know this is a year old, but your solution is to get an old stator and rewrap it with a thicker gauge wire; or I think(can't remember) more turns than stock with original gauge wire.
