Yeah, I'll look at Polini CP and DellOrto carbs.

No knock off carbs .
You will need a new throttle cable for the aftermarket carbs
You can make the current throttle tube work or get a new one they also need a manual choke cable .

Would be what I would get for your level of build it will provide more power and still have good throttle response .
You will need jets in the high 80s low 90s with this carb with stock air box

would also work but throttle response will probably be worse than the smaller carb
with stock air box you will need jets in the low 80's
