What most would do to get the carb size is measure the ID of the outlet. I think the proper way is to measure the venturi. If it's an oval, then you'd need to find the area and the size would be the area of a circle that matches the area your oval has.
All the pics are CV (constant velocity) carbs.

3rd jet is likely for the choke circuit.

Are the carbs with the diaphragm that look like a T almost, better than the carbs with a round diaphragm? And is the mikuni carb better than the khein carb?

You talking about slide shape? Round slides can run really good too..
What is it going on? I'd run which ever carb is off of an engine closest to the engine you've got.
