This carb is supposed to work pretty well out of the box. I would prefer to adjust it as good as possible before mounting it. Aprilia sr125. Stock air box with stock foam or maybe malossi red foam. Stock 125cc (note, 125cc, not 180cc) exhaust.
Should I adjust needle position? Pilot jet? Main starting at 100 working down or save time and start at xx?
Carb comes stock with Main jet #82 Pilot jet #45
I have these main jet options: 70
75
80
82 85
88
90
95
98
100
I have these pilot jet options: 40
45

Hey bendover! (Gotta love that) in order to avoid work, frustration and rework, you should consider the following sequential steps:
1.New air filter, spark plug, clean fresh fuel 2.Check/Set float level and re-new float needle 3.Pilot jet sizing and adjustment 4.Needle valve step adjusting 5.Main jet sizing and testing
The steps are fuel tuning related to throttle opening, with a little functional overlap. It will save you many hours of headache. There is a full procedure here somewhere or I can send you a copy of mine if you would like it. (My 14 page copy contains elements and pictures from 4 or 5 sites, with the English cleaned up for better clarity)
It is very hard to get numbers from others tuning experiences due to variable factors like fuel octane, humidity, atmospheric temperature while you're tuning, altitude...and the biggest one: Your scooters modifications and actual condition.
Good luck! I am sure someone will jump in with some numbers top shoot for. My 125 has FI, so I cannot help.

Thanks for input Thai gyro!
If anyone else comes here looking for info:
Stock pilot is 45 and a bit too rich for my setup, four stroking on first few mm of throttle but not on idle. 40 should do.
Needle was too rich. Four stroking on low throttle. Needed to put clip in topmost position (was second from top). Became perfect.
Main jet. 100 way too rich. Skipped 95. 88 gave ok performance but not much/not noticably better than mid throttle. Leads me to believe too lean. It felt it got better when adjusting air/fuel screw to richen up. So decided to run 95 because i dont have 90. But four stroke a bit. I suspect 92 would be sweet spot.
Bottom line on my setup: 40 pilot, 92 main, clip in top position.
Setup: 172cc, 25mm dellorto phbl (malossi), malossi red air filter foam. Quite cold air at about 5 degrees celsius (5 over freezing).
