Keep in mind oil temperature is actually lower than temperature inside piston or so to say "it takes a second" to transfer from piston to oil, so if you hitting like 100c then piston could be at 105c or 110c already, i'd suggest pulling over on anything close to 100c and waiting to cool down.

This setup is fine if you just want to keep "casual" tabs on your engine temps. If you're modding/tuning and needing "real time" temps you're better off running a CHT(cylinder head temp) gauge. For example, if your running lean and having temp spikes under load, a cht gauge is going to see this right away. The temp spike is going to take its time transferring thru the cylinder/head, thru the oil and to the sensor, by then the damage is already done. I doubt its a "second" delay from cylinder wall to oil to temp sensor. katt, you should run both gauge types(oil & cht) so you can verify the difference in temps and the transfer temp from metal(cylinder) to oil temp differences.
