You have a great question drbob! It seems easy to many, but the important things are often overlooked.
Things to be aware of: If you are not changing carbs, you should get a cable with matching end hardware. At the cafb end, you can find ball ends, barrel ends and maybe some strange ones. I have found cables in bike shops and auto parts stores...and on-line. The on-line thing requires good specs...
Know you needs, meaning measure the original everything very closely and take pictures if helpful to you. The biggest problem I have had was length. Many times I thought I was getting the good stuff, only to find different.
The issues are often related to either measured specs on the replacement, or the cable routing that you choose, which is very often different. Not a bad thing maybe, but not the same as OEM. NO BINDING when turning the bars!
I have found that running a stiff wound cable of some sort, in the intended pathway can help. Simply get it routed and mark the connected ends with tape and measure...not always easy, as you must get the carb end firmly planted...so start there. I have dropped a ball of solder at the temporary carb end, just to measure..race bike though, maybe over kill.
The alternate method may be to reassemble your single/double setup and measure it intact. You cannot be too far off, but make allowance for adjustment at the twisty bits on your handlebar. Measure only the tight, exposed pieces and then you can modify the pulling end for fitness.
