I think just Ice Cream on the side with some images and a bright theme would get the message across as well as anything. Random ideas included anyway.

Being Vegas maybe you could have a wheel, draw from a deck, dartboard or other means for those that have made purchases to win an extra dip, cone, etc. If no win a token or such could be issued with a certain number of them earning a free dip or cone to generate sales. Odds to win could be probably no better than around 8:1 or so.

Thanks for the ideas guys.
I spent two hours today looking at pictures of ice cream trucks trying to get ideas on what would look good for graphics. There were several that I liked, but I think in the end I'm just going to go with something simple white vans with just the words "ice cream". I decided this because I really don't know how much money they will generate and so I'm worried about spending a bunch of money and not recouping it. I basically have one shot at this and so I'm going to try to be as wise as I can. Wish me luck!
