Haha...Thai food! Southern Thai, super spicey! If you ever get a desire to come here, look out for southern food unless you truly like heat!

Yes! They call it "Phet" (pet), which means spicey hot! There are spicey dishes all throughout Thailand, but the south has the hottest. You can order it "Phet", or "Phet-Phet", as I do...or for those who cannot tolerate spicey, but want to get an idea, simply order it "Farang-Phet"...meaning wimpy spiced for westerners. They will tone it down a lot.

Speaking of chicken, made this tonight. allrecipes.com/recipe/45954/roast-sticky-chicken-rotisserie-style/I make it typically once a month, sometimes twice because it's "DA BOMB". My method of cooking just 1, 4-5lb bird is simply on an oven rack in a 9x13 pan, covered in foil at 250 degrees for 3 hours (the smell will drive you insane), then bump up the heat to 350-375, take off the foil, glaze chicken with bastings, cook uncovered 30 more minutes, one more baste, then let it set, while setting, make gravy with pan drippings. Uh... YUUMM!!!
