I notice some performace variator kits come with teflon on the surface on the variator. Does that help? Some performance variators come with larger rollers in mm size? Does that help? Also some kits come with just the variator and cover and some come with the fan also and does it matter if you stick with the stock fan or used the performance fan?

Teflon on the surface is OK, but it tends to wear off from my experience so I wouldn't call it a selling point.
Larger rollers (16x13) can be easier to find. They could possibly allow the variator to open a little more, depending how it's designed.
I've used the stock fan with my aftermarket variators without issue. Some fans may be lighter or have different angles to farther improve performance, but in most cases I don't think it's a necessity.
I've had good luck with the $50 variator from partsforscooters.com on my 2 stroke.
