Define "mess with" the idle and mixture screws. When adjusting the carb for idle mixture and speed it's not an instant result, but a gradual one. Sometimes it's not after being run for quite a while before the true setting is revealed. What process of adjustment did you follow? Another means of adjusting the idle speed (apart from the carb itself) is adjusting the throttle cable. Have you tried that?
That said, you didn't mention checking the spark plug for good spark and/or proper gap. Did you check that?
Too much oil would result in a lot of smoking, for sure so that would be noticeable.

"Factory settings" may not be the ideal, FWIW. They set them so that they run at the factory which may be at, below, or above sea level and in who-knows-what temperature, under who-knows how much humidity. So you, my friend, will now have to adjust and rejet to suit the prevailing conditions where you are. Particularly as the scoot wears these settings become more critical.
As for the oil, if you have a cable operated pump the cable can be adjusted. That might be a bit more difficult tho...and indeed most around here will tell you to pre-mix the oil/fuel anyway. It certainly is safer, but less convenient. Check the plug and don't forget that it takes a little while for the new settings to take effect.

maybe the idle jet is clogged? Have you removed the jets and looked through them into a light?

Just my thoughts but I don't premix If you are using anything other than full syn it will smoke. Just adjust the idle mix and raise up the idle till just before the back tire begins to spin. Not all will idle really low. My Derbi with a piaggio motor idles so low that it shakes like a harley but never stalls. So to me it sounds like you need to raise your idle a bit and then set the mix and then reset your idle.
