Hi I have a 70cc Peugeot Ludix which is air cooled Peugeot horizontal engine and I am running a 21 m’n carb stage six open air filter and a yasuni t exaust now have I bought a temp meter for on my spark plug and it’s was reading ab 271 on a small ride I feel that is a bit high can anyone tell me what it should be running at

That sounds about right All of my scoots are kitted and piped and I run cylinder head temp gauges
On long wide open runs wide open 3miles or more at a time I run jets that peak out and hold temps in 320 to 340 degrees on my air cooled scoots If I run under 40 mph in town ,my temps will settle around 300 If I am running 30 mph or less 250 to 270 is where she settles to
Air cooled scoots settle in at a lot higher tempaters than liquid cooled scoots You want a main jet that will hold a tempature below 350 degrees on long wide open runs the rich cooling fuel mixture provides 80% of the cooling the fan does the rest

doesn't 271F convert to 132.778 degree celsius? that is extremely hot right or am I converting US metrics to the wrong conversion?

Your conversion is right, but for cylinder head temperature measured right underneath the spark plug, that's not too hot at all. I tend to follow the temps Zino mentions above as well.
