I've got a project I'm doing and I want to make a generator with a 50cc engine. I'd like to use a Honda Metropolitan engine but besides just buying the whole scoot or getting one of the mediocre ones on Ebay, where could I find something like that?

Amazon usually has scoot engines so do many scoot parts dealers. Maybe not a honda but it sounds like any 50cc engine would '~work'. Harbor Freight and Northern Tool have a large selection of engines. Many tool stores have engines. The power output and longevity of a 50cc engine would be very limited. A real manufactured generator would probably be a better choice if you need a generator.
