Is there a difference between a oem coil and a racing coil for the minarelli ignitions

Depends which racing coil. Stay away from cheap ones that make wild performance claims. They can be worse than stock.

What are you trying to achieve, and what is your setup? The coils don’t change a whole lot on standard/light/medium setups. Also, what is your budget for the cdi? You can get the stock ones for €20, or a malossi one for like €160…

You're likely just as well off with a stock coil if it's in good condition. Once you get to high revving stuff, then you might as well replace the whole ignition to get the benefits of a better timing curve and smaller/lighter rotor and many of those include a coil.
You can do spark strength tests to see if it will jump a large gap with a white/blue spark using an adjustable gap tester or even an old plug with the ground strap cut off. If you suspect that your ignition system is causing problems, gapping a spark plug about 0.010" less is a test that you can try. Sometimes missing at high RPM will go away and in that case you do need to investigate the ignition system. You can also check the manual to make sure the coil is in spec with resistance values.
If you do want to buy a coil, look at quality brands like PVL, Selettra, MVT, Stage6, Malossi...
