Assuming you already pulled the shroud and fan off, this is how you get the stator out of a Minarelli motor. You will need a 27mm lefthand thread puller Here you can see the stator plate screws on the top and bottom off the stator plate. This is were an impact driver might come in handy. After you remove the two screws, unplug the stator and push the rubber grommet through the case. If all went well you should have this

Take a picture if needed. Be certain that all wires are out of the way of moving parts (crank and flywheel) when the stator is installed. Always check your woodruff key, the key that aligns the crankshaft and flywheel properly, to be sure it isn't sheared before reinstallation of the flywheel. No specialty tools are needed for installing the flywheel. It should press onto the crankshaft taper when torqued. on your post about the flywheel, you didn't mention if you don't have an impact wrench (side of the road) a variator lock tool, will let you loosen the flywhee nut, and use the puller to pop the flywheel off, just a quick jerk with a socket will pop the flywheel loose... ...also a strap wrench on the flywheel may work A clutch or variator holding tool can also be a good way to hold the flywheel if you use a torque wrench for installation.
