Anyone have a vid or pics for changing the rear brake shoes on a jog/minarelli?

Really, no pics, or video, required.
Remove rear wheel. The center locking nut is going to be tight, and it is a locking nut, so replacement, or a liberal dose of locktite, on re-assembly is recommended. Sometimes you will have to remove the exhaust.... it seems every one is a bit different.
Now you have the shoes in front of you. They are held together with a spring at each end (to each other, over a guide pin on one end, and a pivot at the other). Facing the brake, grab the top shoe lifting it up and pulling it towards yourself.... once clear of the pins it and the bottom shoe will fall off.
Reverse operation to replace.
