I'm thinking of resting for a few hours then going out and swapping out that pickup for a known good one, at the moment it will start, then randomly not fire, I'm going to go over all that wiring with a couple of alligator clips and my meter, and start moving things around, will having idle mixture too rich have an effect on full throttle?

Usually gremlins like that are bad wiring connections. The scoot runs, then it quits, -vibration may have disturbed a connection. When you change a device you move the wires, suddenly it works, only to go kaput again. The china wire is brittle (dirty copper) and breaks anywhere, even inside the insulation nowhere near a connector. The connectors are poorly crimped. The cheap wire terminals 'relax' and lose their grip on each other and the wire. Cheap switches have rivets and joints that come loose. The thin gold flash on connectors looks 'pretty' but is fairly worthless. Connectors and wire corrode. Lots of Gremlins...
Copper wire must be very pure >99.9% and annealed or it is brittle and has high resistance. Pure copper and annealing is expensive so guess what gets used in bottom buck scoot parts.

I was thinking something similar. You've got a intermittent connection problem somewhere. Maybe ground to the block or coil? Or the plug wire or cap has a bad connection? Those two are what have bit me in the ass before.

I think you’ve hit the nail on the head. The poor devil is in a terminal loop of electrical parts swapping and or carb futzing. He might be better off pulling the motor for a spare and shredding the rest of it then start over with something new. And as some guy keeps saying only make one change at a time. But first measure and write down all appropriate voltages with your own DMM, and when comparing your pulse voltages to someone elses, your MMV. How long has this been going on? To quote a song title. I replaced all the wiring going to the CDI for this very reason, I had a failing charge coil on the stator, then this crap, I'm about to just say screw it, it's never going to run, my truck is broke, so it's walking from now on.

once again, I have no trigger voltage from the pickup, and that's directly from the stator plug, sometimes I do, and sometimes I don't, brand new stator too, and not a cheap one

OK I just removed my CDI sub harness I had made, and reworked all of the pins on the CDI plug, all of them were loose plugged in, if you need a good tool to remove these pins, and a lot of the other pins on the harness, look for the old Nappa 61077 precision screwdriver set, the 61077-1 always has worked well on crimped pin tabs, the design of the blade pops the lock tabs out on many of them. I still have no output from the new pickup coil though, I replaced the stator plugs with high quality weather pack connectors, same with the plugs going into the CDI, I had made an adapter harness

Just remember, the wire from the parts store may have been MADE IN CHINA, -LOL.
You will eventually find the culprit.
What will really drive you nuts is having everything work and NOT know what it was... That is one of the reasons that 'shotgun' troubleshooting is so bad.

I get most of my wire from the yard,late model Japanese cars, I take the harness apart and roll up the wires, parts store wire is a joke, and it's mostly a few colors
