You can do quick stuff to help you get in the ballpark when you aren't sure if it's lean or rich. If you partially cover the air filter or inlet of the air box (tape or your hand if you can reach) and it gets better, then it's lean. If you take off the air filter or air box and it improves, then it's running rich. Those can be kind of big steps, so they aren't for fine tuning, but if it's breaking up like that you're not to fine tuning yet so they may be of use. Wet or dry spark plug may also be a clue for you.
If it's lean, take a look at your fuel system before you make any jetting changes. Just make sure it's not something simple like a pinched hose.
BTW, a stock GY6 should like to hang out somewhere between 7,500 to 8,500RPM for max power.

First step in troubleshooting. I was definitely WAY too rich. Thanks to everyone for the help. Now I can actually do some finer tuning 🤙🏼 Changed main jet from 118 to 115, then tried 112 and as of now it's the best one yet Next stop small top speed run to see the progress youtu.be/SrPuzWkEvNw

Looks like it still needs more work, but that's a definite improvement. You should be able to see that RPM under load when it's right (carb & CVT). Even my little stock 50 would rev to 11,000RPM on the stand, when normal on-road operation is largely around 8,000RPM. Start doing some tuning passes back to back if possible. That should show you where max power is if you record speed and RPM in opposite directions so you don't get so thrown off by wind direction or small inclines or declines. Stick with what gives you the best results or a step richer than the best result. Keeping it on the rich side will help it run a little cooler. www.49ccscoot.com/faq/carbtune.html#mainsel

Definitely far from done. @90gtvert thank you so much for the help. I just did this on some spare time I had today. Since there's no video to finish editing tomorrow I should be able to do the first top speed trial. Maybe even start messing with the wide band.
Would you suggest getting the carb tuned perfectly before jumping into the variator?

Unless it becomes apparent that the CVT is way off, stick with the carb for now IMO.

get it in the ballpark, tune it with the AFR, Tune the cvt, then retune the carb... which at that point would just be small turns on the air screw.
but you gotta put load on it to tune it. the AFR needs load.
