I actually don't smell anything burning... yet at least and I drove 20 miles just now

I think it is... I do max out at 241f at 10.000rpm . In the hot weather I don't know how it got to 287f yesterday... Must be a fluke

That sensor is obviously wrong. Did you use any kind of wire to extend the lead? I know many come with a very short lead. If you did extend it, and you didn't use their extension, then that's what your problem is.

I do use the trail tech extension. Right now it's never hotter than 245f. It was a 1 tim fluke.

245 sounds crazy for water temp. I never used the sensor that attaches to the head and with the readings you get, I never will. That's scary. It hasn't seized or boiled over so it must be fine. I'm not trying to scare you btw, I just don't like those numbers

The gauge is too small for the opening, so we created a metal adapter... Not sure if this is the cause. I'll look into the infra red, but I just don't have dispensable cash right now

The adapter shouldnt change the readings as long as the tip of the probe is in water..Might check with your mechanic about borrowing a temp gun, surely somebody has one in their tool box!

I hope it's just reading a little high. I'll borrow a temp gun from someone. (need to save money now)
So ride it WOT for a n hour or so, then stop while the engine is still running and measure the temp that way? Should I aim at the cylinder head or the cylinder itself?

The head ought to be the hottest area, but its interesting to check the rad and cylinder too!
